滚揉机是利用物理冲击的原理，让肉在滚筒内上下翻动，相互撞击、摔打、达到按摩、腌渍作用。

液压滚揉机工作原理：液压滚揉机采用变频无级调速，速度范围3-12 rpm（可以选择1-4 rpm低速功能）。启动平稳，降低机器启动时的冲击，延长设备使用寿命。专门配置辅料真空吸管。采用（选配）PLC和触摸屏控制可以将总工作时间至多分成六个工艺循环，每个工艺循环分成两步，每一步单独设定时间、转速、真空状态、转向。满足多样性产品的加工要求。高标准的卫生设计。整机采用SUS304不锈钢材料；滚揉桶内部精细抛光，无卫生死角，卸料位置能排水。可选的“V型”和“单片型”桨叶，不同的滚揉力度，适应不同的产品。
