CO2: it is a kind of bacteriostatic gas which inhibits the growth and reproduction of bacteria. Its characteristics:
The best inhibitory effect was on the late stage of bacterial initiation curve (inhibition of bacterial index of about 100 /100g);
Readily soluble in water and fat at low temperatures;
It has a bacteriostatic effect on most aerobic bacteria, but is ineffective for anaerobes and yeasts.
The minimum concentration of bacteria is usually 30%.
O2: it works in three ways:
