豆制品生产线中从原料到制成浆液之磨糊，磨糊的目的是破坏大豆组织结构，使大豆蛋白质能游离出来溶于水中，磨碎时大豆的粗细度对蛋白质抽提有很大的影响，而磨制中加水量的多少，对大豆粉碎的粗细度及磨糊稠有直接的关系，因而磨糊时须控制好豆与水的配比。豆制品机械生产中从原料到制成浆磨豆淋水是用水带动大豆在磨床内起润滑作用;二是磨子运转时发生热量淋水起到冷却作用，三是可使磨碎物细腻，同时在磨的作用下使水和大豆蛋白质混合成均匀的胶体溶液。
