低温油炸机主要特点:
1、加热、油炸、储油、脱油、脱水、油过滤一体化设计,在真空下连续性完成,产品含油量低,产品处于负压状态,在这种相对缺氧的条件下进行食品加工,可以减轻甚至避免氧化作用(例如脂肪酸败、酶促褐变和其他氧化变质等)所带来的危害。在负压状态,以油作为传热媒介,食品内部的水分(自由水和部分结合水)会急剧蒸发而喷出,使组织形成疏松多孔的结构;
2、自动控制温度和压力(真空度),无过热、无过压,确保产品质量和安 全生产;
3、脱油采用变频调速,适合含油率低和含油率高的所有产品;
4、油水分离系统可将蒸发的水油冷却分离,减少水循环的污染,提高水的反复使用率,减少油的损耗;
5、油过滤系统:上下油罐、双室加热系统、单独控制加热、油炸时循环过滤油,使油脂始终保持清洁,且减少了油的浪费;
